Crunchy vegetable and hummus wraps

A quick homemade hummus and a colourful line of vegetables make lunch something everyone can help assemble.

Their job: spreading hummus with a blunt table knife and arranging the filling. Ages 4 and up
25 minutes, with no cooking needed

There is no single correct way to fill a wrap. Set out a few small bowls, spread the hummus all the way towards the edges, and keep the filling in one manageable line. The first one may be a little lopsided. It will still be lunch.

At a glance

Makes 4 large wraps. Prep: 25 minutes. Cook: none. Total: 25 minutes.

Ingredients

For the hummus:

  • 1 x 400 g tin chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 3 tablespoons cold water, plus more if needed
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon fine salt

For the wraps:

  • 4 large flour tortillas, about 25 cm / 10 inches across
  • 2 medium carrots, coarsely grated, about 150 g
  • 150 g cucumber, cut into thin sticks
  • 40 g baby spinach, washed and dried
  • 80 g cheddar, grated

Make it together

A child can spread the hummus using a blunt table knife and arrange prepared vegetables. A grownup operates the blender, grates the carrots, and slices the cucumber and finished wraps.

  1. Put the chickpeas, tahini, lemon juice, oil, water, cumin, and salt in a food processor or blender.
  2. Blend until creamy, pausing to scrape down the sides with the machine switched off. Add water a tablespoon at a time if the mixture is too thick to spread.
  3. Taste the hummus. Add a little extra lemon juice or salt if you prefer.
  4. Lay the tortillas flat. Divide the hummus between them and spread it evenly, leaving a small border.
  5. Arrange spinach, carrot, cucumber, and cheese in a line just below the centre of each tortilla. Keep the filling compact rather than covering the whole surface.
  6. Fold the lower edge over the filling, fold in the sides, and roll firmly. Put seam-side down and let a grownup cut each wrap in half.

Make assembly easier

Bring tortillas to room temperature before rolling so they bend more readily. If one feels stiff, warm it briefly according to its packet instructions and let it cool enough to handle. Put any extra vegetable pieces alongside the wraps for an easy finishing plate.
